Strawberry Sparkling Mocktail

Strawberry Sparkling Mocktail

1 lb (16 oz or 2 cups) frozen strawberries

1/3 cup lemon juice – about 6 lemons

8 cups sparkling water

1/4 cup coconut sugar, optional

Place the frozen strawberries in a microwave-safe bowl. Microwave on the defrost setting until the strawberries are thawed but still cold.

If you don’t have a microwave, place the strawberries in a saucepan and melt over medium heat. Stir occasionally. Remove from heat once the strawberries are soft and slightly thawed but still cold.

Add the lemon juice to the strawberries (and coconut sugar if using) and blend all together with an immersion blender, traditional blender, or food processor. The strawberries should be mashed and slightly slushy.

Pour about 1/4 cup of the strawberry mixture into each cup and top with 1 cup sparkling water.

You could also pour all of the strawberry mixtures into a pitcher and top it with 8 cups of sparkling water to serve. Cheers!
